Oven-Baked Strawberry Chipotle Wings

Directions

Step ONE
Wings: Combine wings, baking powder and salt in large zip-lock bag & toss to coat. Line a baking sheet with aluminum foil, lightly coat a rack with nonstick cooking spray. Layer wings across rack evenly, with space in between for air circulation. Refrigerate wings, on bottom shelf, uncovered for 4-6 hours. Place oven rack in the upper middle position and preheat to 450 degrees. Remove wings from refrigerator and let stand until oven is ready. Bake wings for 20 minutes, then turn over and bake about another 20 minutes or until they are crisp and cooked to an internal temperature of 165 degrees.
Step TWO
Sauce: In a saucepan over medium heat, combine all ingredients, except salt & water. Cook until strawberries just release their juices, 5-10 minutes depending on how ripe the berries are. Reduce heat to low and season with salt. Continue to cook until sauce thickens enough to coat the back of a wooden spoon. If it becomes too thick dilute with a little water to reach desired thickness. Keep warm for the wings.
Step THREE
Avocado Bleu Cheese Dip: Place avocado in a medium bowl. Mash with a fork until smooth. Add crema, bleu cheese crumbles, port & lemon juice. Stir with fork until combined & smooth. Taste first, then season with kosher salt if needed. Garnish with cilantro leaves and serve with wings. Serve: In a large bowl toss wings with strawberry sauce, then place on a platter to serve with Avocado Bleu Cheese Dip.

TIPS

Coating the wings in baking soda will dry out the skin while setting in the refrigerator. This will add crispiness to the wings that rivals deep frying without all the clean-up. Combination of fresh strawberries, balsamic vinegar and chipotle peppers will evolve into a tangy sweet and smoky sauce that will spice up your day. The dip will become discolored because of the avocado. To avoid this squeeze a little extra lemon juice on top and cover with plastic wrap flush against the surface. Then the dip will be good for up to 2 days in the refrigerator.

Ingredients

1-3 lb RANGERĀ® Free Range Chicken Party Wings Value Pack
1 tbsp Baking Powder
1 1/2 tsp Kosher Salt
8 oz Fresh Strawberries, hulled & quartered
1 tbsp Balsamic Vinegar
2 tbsp Yellow Onion, grated
1 tsp Garlic, minced
1/4 tsp Fresh Ginger, minced
2 tbsp Sugar in the Raw
Chipotle Pepper in Adobo, minced
1 tbsp Adobo Sauce, from can
1/8-1/4 tsp Cayenne Pepper, optional, adjust to your spice tolerance
  Kosher Salt, to taste
  Water, as needed for thinning
Haas Avocado, halved, pitted and spooned out
1/2 cup Mexican Crema
1/2 cup Blue Cheese Crumbles
1/2 cup White Port
1 tbsp Fresh Lemon Juice
  Fresh Cilantro Leaves, for garnish
