Summer Ale Citrus Marinated Chicken with Cilantro lemon Gremolata

Directions

Step ONE
In a medium bowl combine the summer ale, lemon juice, coriander, garlic, salt and pepper and olive oil. Place the chicken in the marinate and refrigerate for 1 hour turning the chicken over after 30 min.
Step TWO
Preheat your grill to medium high for 10 minutes, place your marinated chicken on the hot grill. Grill on direct heat for 25-30 min turning every 5-7 minutes.
Step THREE
While the chicken cooks, mix the gremolata ingredients in a small bowl. Season with salt and pepper, to taste.
Step FOUR
Continue grilling chicken until internal temperature of the chicken reaches 170° at the bone. Place chicken aside and let rest for 5-10 mins.
Step FIVE
Plate the chicken and generously top with the gremolata to serve.

TIPS

The beer helps tenderize the chicken and gremolata brings a freshness to the dish. Don’t like cilantro? Try using fresh dill. Side suggestion; roasted rosemary-garlic potatoes or pasta primavera. Seasonal Summer Ale or Columbia Valley Sauvignon Blanc.

  Juice From One Lemon
1 TBSP. Ground Coriander

  Zest of One Small Meyer Lemon
  Pinch of Red Chili Flake
